Bring on the broccoli!

Did you now that steamed broccoli is one of the best cures for over indulgence? Well it’s true! It’s cleansing, healthful, high in Vitamin C, loads of fiber and protein
( 45% of the calories in broccoli are protein!).

You can dress broccoli with a little lemon juice and nutty flax seed oil which is high in Omega 3 oils and quite delicious! (Available at Whole Foods and Trader Joe’s). You can also sauté slivered garlic in olive oil and pour over the top. Growing up in an Italian household, it was how we ate most of our vegetables! I am attaching a few more recipes from your requests.  I’ll keep them coming!


Stir Fried Ginger Broccoli


1 pound of fresh broccoli
1 T. oil
1 small slice ginger root, finely shredded
˝ tsp. salt
˝ tsp. sesame oil

After stir-frying this dish, I let it cool and serve it at room temperature, so it’s particularly suitable for that beautiful Caribbean climate! (I recently sent to this to a friend in the BVI”s).

Separate the broccoli heads into small florets, and peel and slice the stems. Blanch the broccoli pieces in a large pot of boiling slated water for several minutes, and then immerse them in cold water.  Drain thoroughly.

Heat the oil in large wok or skillet.  When it is moderately hot, add the ginger shreds and salt. Stir-fry for a few seconds, and then add blanched broccoli. If it seems dry, add a few Tablespoons of water.  Stir-fry at a moderate to high heat for 4 mins. until the broccoli is thoroughly heated.

Add the sesame oil and continue to stir-fry for 30 seconds and the broccoli is ready to serve.

Creamy/ Crunchy Broccoli Soup      (15 min. to prepare!)

2 cups of vegetable stock or water. (Trader Joes has organic stock in a carton)
3-4 cups broccoli, chopped
1 red bell pepper, chopped
2 red onions, chopped. (I usually put in a half of red onion so I am not offending anyone!)
1 avocado
1-2 stocks of celery, cut in large pieces
Bragg Liquid Aminos
Cumin or ginger, to taste (experiment with different spices!)

Warm 2 cups of stock or water keeping the temperature low.  Add the chopped broccoli and warm for 5 min.
In a blender or food processor, puree the warmed broccoli, bell pepper, onion, avocado, and celery, thinning with additional water if necessary.

Serve warm with Braggs, fresh ginger, cumin, or any other spices you like.
