Avoid all white sugar and white flour. I know this is difficult, however, it will change the way you think about food, as you begin to make healthy choices. There is no nutritional value in white flour or white sugar. Choose Whole wheat instead

Since today is a snow day, I decided to make some soup, and several other meals for the week. (Remember tip #7).  I’ve included a recipe for kale soup.  Yum! 

Portuguese Kale Soup

This is easy to make and very nutritious.  Turkey linguica is 94 % fat free and kale, according to the Center of Public Interest is #1 among vegetables in terms of total nutrients. It’s often called the “the King of Calcium.”

2 pkgs. of turkey linguica
1 bunch fresh kale
I 16 oz. can of kidney beans
1 large onion (diced)
1 large carrot (sliced thin)
4-5 small red potatoes (diced with the skins left on).
Salt and Pepper
Touch of vinegar

1.Cut the linguica into thin slices and sauté in just enough oil to keep from burning. (Remove from pan and put on paper bag to soak up any extra oil).  Put into soup pot.

2.Saute large onion and add to soup pot.

3.Add water to pot to loosen flavor of beans and onion.

4.Add beans, undrained to pot, and more water if needed, to cover all.

5.Add potatoes and carrot, salt and pepper to taste, and bring to a simmer.  Cook gently for 30 mins.

6.Wash kale and tear into bite-sized pieces, discarding tough stems. Add to soup.

7.Cook 5 mins. more until kale is tender.

8.Add vinegar to taste, and serve. Adding this right before serving brings out the flavor.
