Tip #181: Watermelon Gazpacho
Looking for something different to bring to a cookout, or serve to friends over this holiday weekend? I have the perfect solution! Watermelon Gazpacho! It is fresh and so delicious, your guests will be begging for seconds! I probably made this myself 2 dozen times last season! The best part is that it takes minutes to make.
It’s from “Raw food, Real world” and it is totally fat free, yet TONS of flavor.

3 cups watermelon chunks, seeded and pureed in a blender
1 cup seeded watermelon, coarsely chopped
2 med. Tomatoes, peeled, seeded and chopped
½ English cucumber, peeled, seeded and chopped
½ red or green (or both!) bell peppers, seeded and chopped
2 T. lime juice
1 small handful of cilantro leaves, chopped
1 t. chopped fresh ginger
½ small jalapeno, seeded and chopped
1 scallion (white and green part), chopped
1 t. sea salt or to taste
In a large glass bowl, combine the watermelon puree, chunks, tomatoes, cucumber, bell pepper, lime juice, cilantro, ginger, jalapeno, scallion, and salt.
Ladle into 4 chilled bowls and serve.
