Tip #122: Broccoli helps prevent Breast Cancer
I just read something interesting about broccoli. In Debra Stark’s Cookbook, (she owns the Natural Gourmet in W. Concord), she mentions that broccoli is said to help prevent breast cancer because it speeds up the removal of estrogen from the body. Broccoli also has goodly amounts of chromium that helps insulin and blood sugar.
I found a recipe that she has in her cookbook that si very similar to one that I have been making for years. The difference is that I use spinach and she suggests broccoli. Try it both ways and see what you like.
Orzo with Spinach, Feta and Olives
1 ½ cups orzo
2 c. spinach, or broccoli florets
¼ c. olive oil
3 T. pine nuts
1 cup crumbled feta
¾ cup black, kalamata olives
½ cup Romano, grated
1 T. basil
1 T. garlic
salt and pepper
Bring water in a large pot to boil. Add orzo and cook until tender but firm, about 5-8 mins. Drain and place orzo in a large bowl for mixing.
Steam broccoli or spinach in another pot or vegetable steamer until crisp-tender; about 5 mins. Drain and add to bowl with remaining ingredients.
Toss everything together to coat. Season to taste and serve with more Romano to pass.
(Please note: Often I skip the Romano cheese and serve this as a side cold salad. Omitting the cheese is a good idea if you are on a diet)
